The Fountain on Locust is seeking a Kitchen Lead and Admin to join the team. In this role, you will be one of the top kitchen leaders at one of St. Louis’s most popular restaurants.
Be Responsible For:
Running Kitchen Shifts - Ensuring food quality and staff performance.
Keeping your staff on track and ensuring they arrive on time and perform at a high level of productivity. Responsible for managing your own time efficiently with the goal of little to no overtime.
Monitoring and improving kitchen turn times.
Ordering all supplies, ingredients needed to run our kitchen program, monitoring prices and negotiating with vendors. Keeping costs in line, reducing waste and preventing running out of goods.
Responsible for End of Month Inventory of products in storage and walking, inputting them into the system.
Ensuring storage areas and walk in are properly organized, clean, tidy using FIFO practices and Use First stickers.
Planning the menu in partnership with the General Manager, based on sales trends - utilizing data to inform what customers prefer and continuously improving the menu and sales performance by offering the strongest menu that we can. Should be planned no less than 90 days at a time. Take into consideration season, past sales, holidays when planning.
Pricing menu items to hit 3x cost of goods. Audit quarterly. (Due Jan 31, April 30, July 30, October 30)
Reporting on sales numbers and PMIX - and your plan to increase sales/profitability through menu planning at monthly leadership meetings. At 2x annual menu change, replace items that are poorly performing and add items that will increase sales per your data and strategy.
Checking employee performance on the fly each shift and giving feedback to improve performance - checking for plating, tasting preps to ensure consistency of quality and presentation. Communicating any personnel issues to GM and other leaders.
Reducing waste through strong processes and ordering.
Ensure Food Safety standards are continuously maintained
Reporting any equipment or maintenance issues to leadership and following up to ensure quick resolution.
Candidate Must:
Be ServSafe Certified
Be able to manage time and hit deadlines
Be able to write and deliver training
Have a History of Leadership or Training
Be a Servant Leader - able to support and teach
Be comfortable with technology - able to use or learn Sling for scheduling.
Have familiarity with Google Drive or Microsoft Word/Excel products and be able to use these to track employee training.
Have a car, insurance and license as they may be asked to pick up products when needed.
KM Reports to: General Manager & Assistant Manager
Responsible for: All kitchen team members on your shift
Salary: Starting at $42,000 to $46,000, commensurate with experience. Opportunities increase with time, based on performance.
